Our students’ tastes are becoming more sophisticated and adventuresome. Creating a culinary culture helps to meet our students’ expanded tastes and expectations and lead to higher participation. This session will look at how to become a culinary trend watcher, essentials for trainer your staff in culinary skills and other steps important in creating a culinary culture.
11 a.m. -12 p.m. - Creating a Culinary Strategies for School Nutrition Menu Planning
Transform your foodservice operation with these 30 culinary strategies to up your game and increase your participation. Learn how the current trend of quick pickling can add flavor to your menu and reduce sodium or how creating your own signature spice blend can help you brand your program. Other strategies include buying equipment that “multi-tasks” and roasting your vegetables.
